During our great adventure to Nova Scotia’s Wine Country for Episode 109 of SEA AND BE SCENE TV – we had the chance to visit Avondale Sky. On a cold February day we were taken in by the beautiful setting, the warm ‘church’ and the welcoming owners Stewart Creaser and Lorraine Vassalo. It was a wonderful visit to be sure of it. Not included in the broadcast, however, was what happened after we wrapped… all of us enjoying Lorraine’s lovely Chocolate Risotto paired perfectly with their Avondale Sky Pinnacle Hill Ice Wine. So delicious – we’re still dreaming about. Luckily for all of us she was were willing to share the recipe – and so it is with great gratitude that we’ll post it here and recommend you to pick up a bottle of Avondale Sky to go with it it.
Chocolate Risotto – Ingredients
1 Tablespoon butter
1 cup Carnaroli or Arborio rice
4 cups of milk
3/4 cup of sugar
1 teaspoon vanilla
1 Tablespoon unsweetened cocoa powder
2 oz Bakers unsweetened chocolate, chopped

Chocolate Risotto – Directions
In a heavy bottomed pot, melt butter.
Add rice and stir to coat.
Heat milk almost to a simmer and keep warm.
Add milk, one ladle-full at a time to the rice and stir until absorbed.
Continue until rice is cooked and creamy – most of all of the milk will be used.
Stir in sugar and vanilla.
Add the cocoa and stir until completely distributed.
Add the chopped chocolate and stir again until evenly distributed.
